- 1pint of strawberries
- some sparkling wine
- chocolate morsels
You can use any kind of chocolate you want to use for the chocolate covered strawberries. I used dark chocolate, and white chocolate.
The first thing you will need to do is get your strawberries rinsed and dried. Water makes chocolate seize up, so be sure your strawberries are dry.
Next, get a work area set up. Parchment paper on a baking sheet, or a cutting board is perfect.
- I used a double boiler to melt the chocolate. A small pot on low heat, or a microwave is fine, too.
- It doesn't have to be that hot to melt, stir frequently, and it will melt faster.
- Carefully dip the strawberries into the melted chocolate, covering all sides of the strawberry.
- Place the strawberries on the parchment paper, and put in the fridge, the chocolate will harden right up.
- Now de-stem the rest of the strawberries, and throw them in a blender with 2 TBS. of sugar
- Puree until smooth
- Strain to remove seeds
In a mixing glass add:
- Ice
- 3 oz of strawberry puree
- 6 oz of bubbly
-Strain into a champagne glass, and serve with chocolate covered strawberries.
-Enjoy a happy pre Valentine's Day.
